The "chicken" masala is on the menu for this week. We also have an easy, savory herbed tempeh stew, a yummy vegan Jamaican curry with tofu and potatoes, an ultra-easy, hands-off vegan one-pot pasta and a simple but delicious vegan asparagus risotto.

For the weekend enjoy a cheesy vegan Mexican black bean casserole. And none of these recipes takes more than 45 minutes to make!
