Your meal plan for this week includes delicious Cuban style black beans studded with colorful bell peppers, an easy mushroom pasta that will have everyone coming back for seconds, the ultimate comfort food -- a masala khichdi -- that needs just 15 minutes of hands-on time and can be made in the Instant Pot, a satisfying tofu curry, and a umami-laced miso soup with turmeric and ginger.
For the weekend we have a quick but lush, delicious chana masala. Pair it with storebought or homemade basmati rice or vegan naan.
