The weather's warming up but it's still cool enough to get a pot of stew, or curry, going. This week we are cooking for the fading winter while keeping an eye on spring, with recipes like a hearty cassoulet, a French stew, and spicy vegan black bean burgers.

If you still have a butternut squash or two sitting around, use it up in a creamy butternut squash risotto. A spicy mushroom curry, modeled on a mutton curry my dad made growing up, Thai curried chickpeas, and vegan etouffée round out the list.
