On the menu this week are cozy, easy and nourishing dishes, including our popular and oh so easy vegetable curry, a flavorful tofu casserole, a veggie-packed lentil soup, a scrumptious vegan dirty rice, and a deliciously different one-pot pasta dish of spaghetti with kale.

For the weekend we have a plant-based version of the legendary French dish, cassoulet.
