I hope you all are holding up well through the quarantine. I’ve been out of the house twice in the past week, both times to go to the grocery store. They actually rang me up at the front of the entrance while one of the employees did my shopping for me. The control freak in me wasn’t thrilled about having someone else pick out my produce but I’m all for keeping everybody healthy, even if it means eating a few bruised apples. With that in mind, I think it’s likely that we’re all dreading visits to the grocery store right now so I’ve been trying my best to focus on developing recipes that use up pantry staples. I’d say this one fits the bill! For one it includes pasta which, based on the empty shelves at the store, I’m guessing most of you probably have on hand. The sauce is made from a base of raw cashews which I always have stocked because they’re a must when you eat dairy-free. Other than that you just need a few basic ingredients and it only takes 30-minutes to whip up! (more…)
