Hi, it?s Kate. I?m here to blow your taste buds away with another delicious Asian-inspired recipe. If you know me at all, this should come as no surprise. I?m a complete Asian food fanatic. Anyway, this dish is pretty special because we?ve never published anything like it on the blog. It?s where fall produce and Chinese cuisine collide. Introducing, our Delicata Squash & Brussels Sprout Potstickers.Imagine my delight when I walked into Trader Joe?s this week and was greeted by a beautiful display of squash. I had my pick of spaghetti, butternut, acorn, and delicata for these savory potstickers. The first one was a definite no ? the texture isn?t right. Delicata won for its quick baking time (just 15 minutes!) and sweet flavor. Though, I imagine butternut or acorn squash would work just as well.Traditionally, potstickers are filled with meat that?s flavored with green onion, sesame oil, soy sauce, and other aromatic ingredients. Since we?re in the business of eating veggies around here, I made the base from roasted delicata squash, Brussels sprouts, and kale. The result is a flavor bomb that?s almost too good to describe.To make these potstickers, I used JSL Foods Twin Dragons Gyoza Wrappers. I found them to be super easy to work with. They?re thick and flexible and wrap around the filling without tearing. Plus, they?re vegan and non-GMO!
