If you’ve made these Puffed Amaranth, Pistachio and Dark Chocolate Bars then you know what I’m talking about. The combo of pistachios with coconut, dark chocolate, lemon zest and cranberries is something unforgettable. Tangy, sweet, salty and all kinds of delicious.
Now you might be asking why I made a recipe with such similar flavors in bite form instead of bars. Well as much as I love those granola bars, puffing the amaranth can be a bit tedious. Sometimes you need a snack and you need it fast. That’s where these bites come in!
They are made with rolled oats, almond butter and pistachios for fiber, protein, and healthy fats that will keep your energy up. For sweetness I used a small amount of pure maple syrup and juice sweetened cranberries. Using dark chocolate such as Alter Eco’s Super Blackout also helps keep the sugar content low. Just keep in mind that super dark chocolate can be a little bitter for some people’s taste so you may want to use semi-sweet if that’s the case.
I like to use my food processor to make the bites but if you don’t have one, that’s okay too. You can use oat flour in place of the rolled oats and chop the pistachios by hand. Easy peasy.
