I recently set out to perfect shiro wat, one of my favorite Ethiopian stews and perhaps one of the easiest Ethiopian recipes ever. But before I share the shiro with you, I want to give you recipes for the two flavor-building blocks so essential to a delicious shiro and so many other Ethiopian dishes, including my vegan doro wot and misir wot: berbere and niter kibbeh.
