I?m a huge fan of comfort foods (hello, pasta). But for me, summer is all about cool, refreshing recipes that don?t require me to turn on the oven or fire up the stove. I?m especially into popsicles right now. Ever since I bought a popsicle mold to make treats for the Frugal Vegan cookbook launch party, I?ve been dreaming up fruity concoctions to turn into frozen vegan treats. So far, I?ve made a batch with blueberries, coconut milk, fresh mint leaves, and a squeeze of lime. It?s such a refreshing combination!
