? 12 oz extra firm tofu
? 1/3 cup unsweetened non-dairy milk
? 1 tsp turmeric
? 1 tbsp olive oil
? 1 cup zucchini, finely chopped
? 1/2 cup corn (I used mixed frozen vegetables)
? 1 cup cherry tomatoes, halved
? 2 cups spinach, chopped (I used baby spinach)
? 3 tbsp vegan pesto (I used sundried tomatoes with oil, chopped)
? 1/2 tsp salt
? ground pepper

Minestrone Soup with Kale
? 1 tbsp olive oil
? 1/2 cup TVP (Textured Vegetable Protein)
? 1 small onion, diced
? 2 carrots, diced
? 2 cloves garlic, minced
? 3 cups kale, chopped
? 1 (14 1/2 oz) can tomatoes diced ? 2 cups chickpeas, drained and rinsed
? 4 cups vegetable broth, low sodium
? 1/2 - 1 cup pasta

Vegan Pineapple Pepper "Chicken" & Rice
? 1/2 cup extra firm tofu, cubed
? 1 red pepper, diced
? 1/2 tbsp olive oil
? 1/4 cup chopped shallot or red onion
? 1/2 tbsp garlic, minced
? 3/4 cup pineapple cubes with juice
? 1 tbsp spicy mustard
? 1/4 tbsp sriracha
? 2 tbsp apple cider vinegar
? 1 tsp sugar
? 1/2 tsp soy sauce, low sodium
? 1 tbsp arrowroot starch mixed in 1 tbsp water (I used corn starch)
