Vegan Cinnamon Almond Pull-Apart Bread | Liv B



I used my vegan cinnamon roll dough to create this delicious cinnamon almond pull apart bread! Soft, buttery dough layered with cinnamon, cardamom & brown sugar, topped with sliced almonds and baked until golden brown.

Dough recipe:
3 tbsp vegan butter, melted
1 cup non-dairy milk
1 packet quick rise yeast
3 tbsp cane sugar
2 1/2 cups all-purpose flour
1/2 tsp salt
Filling:
1/4 cup softened vegan butter
1/3 cup brown sugar
1 tsp ground cinnamon
1 tsp ground cardamom
for top: 1/4 cup sliced almonds & powdered sugar

1. Heat the milk in a pot until it is warm to the touch (or use a thermometer to check that it is around 110 F. Add sugar and stir to dissolve. Sprinkle the yeast over top. Set a timer for 5 minutes and let it sit without touching it. 3. Add flour and salt to a stand mixer. Add yeast mixture and melted butter and knead 5 minutes until it is a soft dough ball and not sticky to the touch.
4. Let rise around 1 hour or until doubled in size.
Roll out into large rectangle and spread vegan butter & sugar mixture on top. Cut into squares (approx 24) and place in a greased loaf pan.
6. Let rise about 30 minutes or until puffed up to fill the loaf pan (see video).
7. Preheat oven to 375 F. Sprinkle almonds on top.
8. Bake 30-32 minutes, until deep golden brown on top.
