Vegan chai apple donuts!



Chai Apple Doughnuts ? the best fall treat! What?s your favourite filling"! I?ve been obsessed with apple lately! ?

Doughnuts:
3/4 cup nondairy milk, warmed to 110 degrees F
1/4 cup sugar
4 cups all purpose flour
2 1/2 tsp (or one individual packet) active dry yeast
3/4 cup vegan butter, room temp
1/4 cup vegan yogurt or applesauce
High heat safe oil, for frying

Apple filling:
3 apples, peeled and chopped into small pieces
1 tsp cinnamon
2 tbsp brown sugar (you can adjust this amount)
3 tbsp water
1 tbsp corn starch mixed with 1 tbsp water

Chai sugar:
1 cup white sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1/4 tsp cloves
1/4 tsp allspice
1/8 tsp cardamom
pinch ground black pepper
In a small mixing bowl, combine the milk sugar, and yeast. Cover and let sit 10 minutes until foamy.
In a stand mixer, add the flour, yeast mixture and yogurt and mix until it makes a dry, shaggy looking dough. Add the butter and mix until incorporated, then knead for about 10-15 minutes until dough is pliable and not sticky to the touch.
Place dough in a greased bowl, then cover with a towel or plastic wrap and let rise in a warm area for 1-2 hours until doubled in size. Divide dough into 12 even balls. Place on a parchment-lined baking tray, cover loosely with plastic wrap and let rise 1 more hour.
When ready to fry, heat the oil until it reaches about 350-365F, then fry doughnuts a few minutes per side until golden brown.
