Vegan Caramelitas

Vegan caramelitas:
3/4 cup coconut milk
1/2 cup packed brown sugar
1 cup flour
1 cup quick oats
3/4 cup sugar
1/2 teaspoon baking soda
Pinch of salt
3/4 cup melted vegan butter or margarine
1 cup vegan chocolate chips
1. Preheat oven to 350F. Line a 9inch square baking pan with parchment paper.
2. In a pot on medium heat, bring coconut milk and brown sugar to a boil, then lower and simmer 10 minutes until thickened slightly
3. In a mixing bowl, combine flour, oats, sugar, baking soda and salt. Mix well. Add vegan butter and stir to combine. 4. Press half the mixture into your prepared baking dish.
5. Bake in preheated oven for 10 minutes
6. Sprinkle chocolate chips evenly overtop. Drizzle caramel sauce evenly over top. Crumble other half of oat mixture evenly overtop.
7. Bake 20 minutes until lightly golden brown on top.
8. Remove from oven and let cool before slicing. LIV?S TIP: serve frozen or chilled for best results! I love it this way but slightly warm and gooey is good too.
