Crispy Chicken Pesto Pasta (plant-based recipe!)

Ingredients:
2 servings rotini pasta (approx 170g)
2 servings vegan chicken
1/2 block (6oz) silken tofu
1/4 cup basil (or mix of herbs is good too)
1 tbsp nutritional yeast
Juice of 1/2 lemon
Generous pinch of salt
1/4 tsp garlic powder
1 tbsp oil
2 cloves minced garlic
1/2 cup chickpeas
1. Boil pasta according to package directions. Drain and set aside. Bake or air-fry vegan chicken according to package directions. 2. In a blender, combine tofu, basil, nutritional yeast, lemon, salt & garlic powder and blend until smooth. Add a splash of water if needed. If you?re using a big blender jug vs a bullet type you might want to double the recipe so it blends easier!
3. Heat a frying pan over medium heat. Add oil & garlic. Add chickpeas, pasta and sauce and stir to combine. Cook a few minutes, stirring frequently, until heated through. Top with vegan chicken & enjoy!
