Cowboy Butter Steak Pasta (plant-based)
Cowboy butter steak pasta (plant-based version!!!) ? saw @foodieholly make this and had to make a meat-free dairy-free version for you all!
(Serves 2)
Ingredients:
180g rigatoni
1/4 cup cashews + 1 cup water (OR 1 cup coconut milk)
1/3 cup vegan butter
1/2 red onion, finely diced
2 cloves garlic, minced
2 tsp paprika
1 tsp dried thyme
1/2 tsp chilli flakes
1/4 tsp ground cayenne
2 tbsp lime or lemon juice
Small handful of parsley, finely chopped
Vegan parm, optional
I served mine with beyond steak seasoned with some paprika and black pepper. You can use any vegan steak substitute you like!
1. Boil pasta until aldente. Reserve 1 cup of pasta water. Drain and set aside. 2. Meanwhile, in a high speed blender blend cashews and water for 1 minute on high until smooth. Set aside.
3. In a small frying pan add a tbsp of butter or oil and fry vegan steak according to package directions. Sprinkle with paprika and black pepper, if desired.
4. In a large pan or pot on medium heat, add the butter. Once melted, add onion and cook for 1 minute. Add garlic and spices and cook another minute. Add cashew cream, lime juice and reduce heat to a low simmer, stirring frequently.
5. Add pasta and stir to combine, adding splashes of reserved pasta water as needed to thin the sauce and make it silky.
6. Top with parsley and parm and serve immediately. Enjoy!
