Banana Bread Cinnamon Rolls ?



Banana bread cinnamon rolls with almond butter frosting ???? not letting go of summer yet but you know the second a single leaf falls I?m subbing in pumpkin for banana!!!

Cinnamon Roll Dough:
1 1/3 cups all-purpose flour
1 tsp instant yeast
2 tbsp white sugar
1/4 tsp salt
1/3 cup soy milk, warmed but not hot
1/2 ripe banana, mashed
2 tbsp vegan butter, melted

Banana cinnamon filling:
2 tbsp vegan butter, softened
1 tbsp cinnamon
1/3 cup brown sugar
1/2 banana, chopped

Icing:
3 tbsp vegan butter, softened
1 tsp almond butter
1 cup powdered sugar, sifted

Directions:
1. Grease and line a small casserole dish or round cake pan with parchment paper. 
2. In the bowl of a stand mixer with dough hook attachment, whisk together the flour, yeast, sugar, and salt. 3. Add in the milk, banana, and vegan butter, and mix on medium speed, kneading the dough until a smooth ball forms, about 10 minutes.
4. Cover and let rise for 30 minutes to one hour, until doubled in size.
5. In a small bowl, mix the cinnamon, vegan butter and brown sugar together until combined. Lightly mash in the banana and set aside.
6. When risen, tip dough out onto a floured surface and roll the dough into a rectangle (approx 6? by 12-15?).
7. Spread the filling in an even layer on the dough. Roll up the dough starting with the short edge, slice into 5 rolls and place in prepared baking dish.
8. Cover and set aside to rise 30 mins.
9. Whisk together frosting ingredients until smooth. Set aside.
