Back to School: 15 Minute Vegan Meals



The second video in my back to school series! Whether you are going back to university/college, high school, grade school, or have kids going back to school, these super delicious and easy vegan 15 minute meals will be a lifesaver for dinner (and leftovers can be taken for lunch the next day!) I hope you enjoy these 15 minute recipes!

Recipes:

Sweet Potato Tacos (serves 1-2):
4 taco shells
1 sweet potato, grated
1/4 cup onion
1-2 tbsp oil
salt & pepper to taste
1 tsp chipotle chili powder
lettuce
avocado
salsa

Bake taco shells in oven according to package directions. Heat a frying pan to medium heat and add onion, sweet potato and spices. Cook 8 minutes or until soft. Assemble tacos with toppings and serve.
Thai Red Curry Pizza (makes 1 large pizza):
1 large pizza crust
1/2 cup - 3/4 cup Thai red curry sauce
green onion, sliced
red onion, sliced
red bell pepper, sliced
mushrooms, sliced
vegan cheese

Assemble pizza with all toppings, then bake according to package directions. Serve.

Cheesy Tomato Pasta (serves 2):
2 servings rigatoni or other short pasta
1 zucchini (or half of 2 kinds), chopped
1/2 red bell pepper, chopped
1/4 onion, chopped
1 tbsp oil
1 cup tomato sauce
salt & pepper to taste
1 tsp sugar
1-2 tsp mixed italian herbs
3 tbsp nutritional yeast

Boil pasta. Drain and set aside. Meanwhile, panfry veggies in oil over medium heat. When softened, add sauce and spices. Stir to combine and let cook a fe...
