Vegan chewy molasses cookies



Only a few more weekends to plan & make cookie boxes!!!! You NEED to include the perfect chewy ginger molasses cookies - my fav for dunking in a latte ? SAVE for the recipe below!

Ingredients:
1/4 cup vegan margarine or softened vegan butter
1/3 cup brown sugar
2 tbsp fancy molasses (the stuff that comes in a carton)
3/4 cup all-purpose flour
1/2 tsp baking soda
1/2 tsp ground ginger
1/2 tsp ground cinnamon
pinch of salt
Optional: white sugar for sprinkling over top

Directions:
1. Preheat oven to 350F.
2. Cream together butter and brown sugar. Add molasses and mix to combine.
3. Add flour, baking soda, ginger, cinnamon and salt and mix to combine. It will be a thick dough. 4. Using a cookie scoop (mine is a 3 tbsp size scoop) or your hands to roll 3 tbsp of cookie dough into a ball and place on a cookie sheet. Repeat with remaining dough, leaving room in between for cookies to spread.
5. Bake cookies for 10-12 minutes, until golden brown around the edges. Let cool on pan for 5-10 minutes and they will firm up as they cool.
6. Storage is a little bit tricky as they will lose their crisp/crunchy edges if you store in an airtight container. However they will remain chewy and delicious!
