??? THE COZIEST VEGAN SOUP? ?

?Meatball orzo soup:
1 tbsp oil
1/2 onion
1 carrot
3 cloves garlic
10 frozen meatballs
3 tbsp tomato paste
4 cups veggie broth
1 can lite coconut milk
1/2 cup orzo
1 tsp each dried basil, oregano
Chilli flakes to taste (I did 1/2 tsp)
Salt and pepper to taste
Handful of kale, chopped Optional: buttery bread and vegan sour cream for serving

1. To a pot, add oil onions and carrots. Cook a few minutes until onions are translucent.
2. Add meatballs and brown. Add tomato paste, broth, coconut milk, orzo and spices. Simmer, covered until orzo is cooked (approx 10-15 mins). Add kale just before serving.
3. Serve with bread and sour cream. Enjoy!
