Hot chocolate cookies:
1/2 cup vegan butter, softened
3/4 cup sugar
2 tbsp milk
1 tsp vanilla
1 1/2 cups all purpose flour
1/4 cup hot cocoa mix
2 tbsp cocoa powder
Pinch salt
1 tsp baking soda
1 tsp baking powder
1/2 cup chocolate chips
12 large vegan marshmallows
PREHEAT OVEN TO 375F.
1. Cream together butter and sugar. Add milk and vanilla and stir to combine. 2. Combine flour, hot cocoa mix, cocoa powder, baking soda, and baking powder. Add to wet ingredients and stir to make a dough.
3. Scoop a few tbsp of dough into your palm. Flatten it, then place a few chocolate chips and a marshmallow in the center and encase it (almost) fully in the cookie, leaving some open on top. Place on cookie sheet. Repeat with remaining dough.
4. Bake in preheated oven for 10-12 minutes, until marshmallow is golden brown. Remove from oven and let cool a few minutes before removing.
