Beginner Vegan Meals + Workout Routine!

Today I am showing you guys two SUPER easy and delicious vegan meals that are perfect for lunch or dinner! You can also make a large bath for a weekly meal prep :). I also talk about how I am apparently a runner now (") and what workouts I do to supplement my running! I hope you guys enjoy this video!

RECIPES (including the modifications I made) :

Curry Sweet Potato, Tofu & Spinach:
2 cups spinach leaves
1 sweet potato, chopped
6 oz. smoked tofu, cubed
1 tbsp olive oil
1-2 tsp curry powder (or sub 1-2 tbsp curry paste)
2 tbsp coconut milk

Boil the sweet potato cubes until cooked. You should be able to pierce a piece easily with a fork. Heat the oil in a large frying pan on medium heat. Add the tofu and sweet potato cubes and saute for a few minutes. Add the curry powder and coconut milk (or curry paste if using) and stir to combine. Add the spinach and cook 5 minutes or until it is wilted. Enjoy!
Creamy Lentil Pasta:
4 oz. pasta
1/2 tsp oregano
1/4 tsp black pepper
1/2 white onion, chopped
1/4 cup vegetable broth
1 cup red lentils, cooked
1 tbsp olive oil
1 1/2 cups tomato sauce
1/4 to 1/2 tsp salt
1 tsp sugar

Cook the lentils according to the package. Set aside. Cook pasta according to the package. Drain and set aside. In a frying pan on medium heat, cook the onion in the olive oil until onion becomes translucent. Add the spices, vegetable broth, tomato...
